Tasting Notes
Pale straw with hints of green-gold.
A focused, precise nose of Asian pear, Quince, white Peach, and lemongrass. The aromas are initially tight and linear, but open up with a swirl or two of air. Air reveals a weighted, complex, earth-driven note of wet stone and lanolin, suggesting the ability to gain weight and power with time. The palate is viscous, with a smoothly textured profile and bright acids that define the flavors. Intentionally made to drink on release, this will unfurl in complexity over the next four to six years. But, frankly, I would encourage you to enjoy this wine in the beauty of its youth. It is too delicious not to!
Cellar Notes
The Wilson Farms Chenin was picked on August 22nd and was whole-cluster pressed directly to one Puncheon and one Francois Freres barrel. Both used and therefore neutral. A natural primary and secondary fermentation ensured, with the wine being left on primary lees until February. The Gimelli was harvested on October 2nd and pressed whole-cluster to five neutral Francois Freres barrels. Once both fermentations were complete, the wine spent five months on lees until being blended with the Wilson Farms Chenin. The blend was returned to barrel until being racked to tank for bottling in late July. Bottled on August 1st after eleven months in oak, a total of 142 cases were bottled. Alcohol 13.2%
