Platinum colored core with hints of green on the rim.
A complex lifted aromatic profile of Quince, Bartlett pear, camphor, lemongrass that at first are reserved but open with a swirl of air in the classic style of Chenin Blanc. Once aerated, a saline quality emerges that combines wet stone and petrochor notes, further enhancing interest and intrigue. The palate is bright, with fresh acids that are buttressed by a smooth, slightly oily texture. The weight on the mid-palate is elegant but powerful at the same time, a trait I find so seductive in Chenin Blanc. Flavors of green apple and orange rind compliment the aromatics before a long persistent finish. This wine is delicious, so drink up and enjoy over the next 8 years.
Cellar Notes
The 2025 Chasing Ether White Blend is a blend of 75% Chenin Blanc, 6% each of old vine Palomino and Riesling, 5% mixed white field blend, and 3% each of Grenache Blanc and Picpoul. The grapes are grown in seven different appellations from El Dorado in the north all the way to Santa Barbara in the south and many in between. The goal is to find exceptional sites that are organically or biodynamically farmed, that are a unique expression of grape variety and site. Once harvested, mostly at night, the grapes are whole cluster pressed and then transferred to neutral french oak for fermentation and aging. Once both primary and secondary fermentations are complete, the separate lots are aged on the primary lees for six months before being racked and blended. A further three months in barrel follows before bottling in June for a total of ten months in barrel. A total of 836 cases were produced. Alcohol 13.5%. Vegan friendly.
