Tasting Notes

A beautiful, bright, pale crimson, carmine red.

A bright, lifted, and very expressive nose of raspberry, strawberry, pomegranate, tarragon, and chalk. Seductive and inviting, the aromas draw you in. A supple, fresh entry is full of energy and lift. The acids are very well integrated, partnering with the smooth texture on the mid-palate. There are no edges on this wine—deceptively integrated and charming, it clearly expresses the freshness of the grape and how delicious a light red can be. The finish cleanses the palate, leaving you wanting more. Intention realized! Drink chilled on a warm summer evening or at cellar temperature on cooler nights. Have fun with this wine—experiment to find your sweet spot.

Cellar Notes

The 2025 Chasing Ether Cinsault is a blend of 76% Cinsault and 24% Pinot The 2025 Chasing Ether Cinsault is a blend of 76% Cinsault and 24% Pinot Noir. The Cinsault, from the Peeps Vineyard in El Dorado, was biodynamically farmed and 50% whole-cluster fermented with native yeast. Pressed at 8 Brix, the wine was transferred to neutral French oak barrels for maturation.

The Pinot Noir was grown in Occidental and 65% whole-cluster fermented with native yeast before being pressed directly into a mix of new and neutral puncheons and barrels. The whole-cluster fermentation of both lots contributes to the bright, effervescent aromas found in the wine as carbonic fermentation occurs inside the berries.

After aging separately, the two wines were blended a month before bottling in June, for a total of ten months in barrel. A total of 164 cases were produced. Alcohol: 11.7%. Vegan-friendly.
